For the Steak

  • 1 beef tenderloin (center cut)
  • 6-8 slices of prosciutto
  • 6-8 slices of provolone cheese
  • 1.5 tbsp stone ground mustard
  • 1 tbsp coarse sea salt
  • 2 tsp black pepper
  • 2 tbsp parsley, chopped
  • 1 tbsp garlic, minced
  • 1 tsp red chili flakes
  • 1 tsp jalapeno (pureed or diced)
  • 1 medium lemon (juiced)

  1. Roll the tenderloin. Carefully roll the tenderloin back onto itself until it maintains its original shape.
  2. Skewer the roll. Insert wooden skewers into the rolled tenderloin, spacing them about 1” apart, skewer through the flap of the steak to prevent it from rolling open.
  3. Slice the steaks. Cut between each skewer to create individual steaks.
  4. Season the steaks. Lather each steak with oil, then season with salt and pepper.
  5. Prepare the gremolata. In a bowl, mix together parsley, garlic, chili flakes, jalapeno, and lemon juice for the spicy gremolata. Set aside until ready to use.
  6. Preheat the grill. Preheat your Oklahoma Joe’s Blackjack Kettle Grill to medium high heat (about 375F) for direct cooking.
