Lava Flow Popsicles

May 11, 2026 by

When the summer sun warms your skin, nothing beats the refreshing taste of homemade popsicles. Lava Flow Popsicles are a tropical blend of pineapple, mango, and strawberry, with a creamy coconut twist. This simple recipe takes about 20 minutes to prepare and relies on fresh fruit for vibrant flavors that are hard to resist.

This recipe is perfect for hot days when you need a cool treat to share with family and friends. You can make them in advance since they’ll keep well in the freezer for 2-3 weeks, ready to delight on demand.

Why You’ll Love This Recipe

  • Bursting with tropical fruit flavors that evoke beach vibes.
  • Creamy coconut layers create a luscious texture.
  • Quick to prepare and easy to customize with different fruits.
  • Kids and adults alike will love these colorful, refreshing treats.

What You’ll Need

Gather the following ingredients to create your Lava Flow Popsicles.

For the Pineapple Layer

  • 1 1/2 cups cubed pineapple
  • 1 cup diced mango
  • 1/2 cup coconut milk, preferably full-fat canned

For the Strawberry Layer

  • 2 1/2 cups strawberries
  • 1/4 cup orange juice
  • 1 tablespoon honey or agave, optional

Use fresh or frozen fruit as desired.

Substitutions & Swaps

  • Coconut milk can be swapped for almond milk.
  • Any berry can substitute for strawberries.
  • Maple syrup can replace honey or agave.
  • Use frozen fruit for a colder treat.

How to Make It

Follow these simple steps to prepare your popsicles.

1. Blend the Pineapple Layer

Add pineapple, mango, and coconut milk to a blender. Puree until completely smooth, adding additional coconut milk as needed. Taste the mixture, and blend in a drizzle of honey or agave, if needed.

2. Blend the Strawberry Layer

Add strawberries, orange juice, and honey or agave to a blender. Puree until completely smooth. Taste and add more honey or agave, if needed.

3. Layer in Popsicle Molds

Alternate scoops of the pineapple mixture and the strawberry mixture into popsicle molds. For more distinct layers, use a small funnel or a spoon to add the fruit purée mixtures. (If you pour straight from the blender/liquid measuring cup, they’re more likely to combine.)

4. Freeze

Insert popsicle sticks and freeze until completely solid, at least 3-4 hours. To remove popsicles from the popsicle mold, run the sides of each well of the popsicle mold under cool water for a few seconds, then gently wiggle the popsicle stick side to side to loosen the pop. (If it’s not budging, run it under water for a few more seconds.)

How to Store It

Fridge: Not recommended; best enjoyed frozen.
Freezer: Yes, these popsicles freeze well for up to 3 weeks.
Reheat: N/A; serve frozen.

Tips for Best Results

  • Use fully ripe fruit for the sweetest flavor.
  • Blend the layers separately to maintain distinct colors.
  • Experiment with different fruit combinations for variety.
  • Serve immediately after removing from molds for the best texture.

Serving Suggestions

  • Pair with a tropical fruit salad for a fun summer picnic.
  • Serve at children’s birthday parties as a colorful treat.
  • Enjoy as a light dessert after grilling out on warm evenings.
